The base of intensified cider made from locally and sustainably grown heirloom apple varieties, and concentrated before fermentation in our cold winter weather, then fermented cold and slow to 16% alcohol without any addition of sugar or spirits. The base is then infused with organic basil and organic anise hyssop to create deep flavors and fresh aromatics.
How to serve
As an after dinner amaro or pour over ice with a twist of lemon for a delicious easy before dinner drink. You can also use it instead of Lillet a variety of cocktails like a French 75 or Vesper.

A species of Fernet that could only be made in Vermont! Apples grown by friends in Vermont, infused ingredients foraged from our own farms and in the wild, and raw honey from a local beekeeper. Add in some wormwood root, spruce tips, wild mint and a few other botanicals and alchemy is complete.
How to serve
The newest member of the family, Wood falls into line with traditional
amaro. It is excellent in a cocktail with gin and mint, or we like it solo
after dinner to sip, over ice. Or not.
Long before Deirdre Heekin founded La Garagista winery on the hillsides of a Barnard, Vermont farm, she was enchanted by how infusions and macerations, like amaro and rosolio, enrich wine and spirits. Deirdre’s book, Libation: A Bitter Alchemy, a collection of wine and spirit essays, led to a chance meeting with Eleanor Leger of Eden Ciders. Deirdre introduced Eleanor and Eden Ciders to the world of elixirs infused with different herbs, flowers and fruits collected from the countryside. One snowy evening in a hotel tavern, they discussed a collaboration to create something beautiful in the hills of Vermont—an agricultural expression that could represent a sense of place and all of its native flavors.
